1. Cinnamon stars
Ingredients:
・180 g of powdered sugar
・1/2 sachet of vanilla sugar
・300 g of grated almonds
・1 teaspoon of cinnamon
・1 pinch of salt
・2 egg whites
・A bit lemon juice
Ready in: approx. 30 minutes
Preparation:
Preheat the oven to 160°C top/bottom heat. Add a pinch of salt to the egg whites and beat them until stiff, then add the sugar and lemon juice and finish beating. Set aside about 5 teaspoons of the mixture for the glaze. Next, mix the egg white mass with the remaining ingredients with a spoon and knead it briefly by hand afterwards. Roll out the dough to a thickness of approx. 5-8 mm. Cut out stars and place on a baking sheet lined with baking paper. Finally, brush with the remaining egg white glaze and bake the cookies in the oven at 160°C top and bottom heat for about 12-15 minutes (should still be soft when removed).

2. Orange cookies
Ingredients:
For the dough:
・350 g wheat flour type 405
・50 g grated almonds
・220 g butter
・100 g sugar
・1 teaspoon vanilla sugar
・1 teaspoon baking powder
・1 pinch of salt
・2 medium sized eggs
・1 organic orange, finely grated peel
For the sugar icing:
・150 g powdered sugar
・1 1/2 teaspoon orange juice freshly squeezed
Ready in: approx. 20 minutes
Preparation:
Preheat the oven to 180°C top/bottom heat. Put the liquid butter in a bowl together with the sugar. Mix everything with a hand mixer until the sugar has completely dissolved. Add the eggs one by one and stir everything well. In another bowl, mix the sifted flour with the salt, the vanilla sugar, the baking powder and the grated orange peel. Add the mixed flour into the egg and butter mixture and stir it until mixed. It should form a fluffy dough. Now use a tablespoon to put the dough in small dots on the baking paper at a sufficient distance. Now bake the orange cookies for 7 minutes. Afterwards take them out of the oven and let them cool down. Then prepare the sugar icing and decorate the cooled cookies with it as you like.

3. Cornflakes clusters
Ingredients:
・100 g solid vegetable fat (e.g. baking margarine)
・80 g of cooking chocolate
・80 g milk chocolate
・60 g grated hazelnuts
・1 sachet of vanilla sugar
・200 g cornflakes
Ready in: approx. 20 minutes
Preparation:
Melt the vegetable fat in a water bath and then gradually melt the chocolate in it. Mix the cornflakes and hazelnuts in a bowl. Then pour the melted chocolate over the cornflakes and mix well. Then use a spoon to put small piles into confectionery molds or alternatively spread them in small portions on a baking paper sheet and refrigerate until the chocolate hardens again.

4. Hazelnut macarons
Ingredients:
・2 egg whites (from eggs size M)
・1 pinch of salt
・130 g of sugar
・1 teaspoon organic, finely grated lemon peel
・150 g ground hazelnuts
・24 round wafer papers (Ø 4 cm)
・24 whole hazelnuts
Ready in: approx. 25 minutes
Preparation:
Whisk the egg whites with a pinch of salt in a big bowl. Pour in sugar after 2 minutes and keep beating until it’s stiff. Mix the grated lemon peel with the ground hazelnuts and then carefully mix in with the egg white mass. Line the baking sheet with baking paper. Preheat the oven to 180°C top/bottom heat. Put 24 wafer papers on the baking paper and leave a little space between each. Pour the macaron batter into a piping bag with a round tip (11 mm Ø). Pipe the macarons on the papers by leaving around 1-2 mm distance around the batter. Place a whole hazelnut on each macaron. Bake the macarons for about 10 minutes, until they are lightly colored. Let the macarons cool down.

5. Soft vanilla cookies
Ingredients:
・180 g of flour
・180 g semi-fat butter
・2 sachets of vanilla pudding powder
・90 g of sugar
・2 vanilla pods
Ready in: approx. 25 minutes
Preparation:
Preheat the oven to 180°C circulating air heat. Scrape out the vanilla pods and melt the butter. Let the melted butter cool down. Mix the vanilla, butter and sugar together until creamy. Add the vanilla pudding powder and flour and stir or knead well. Shape 45 balls out of the dough and place on a baking sheet lined with baking paper. Press with a fork to create a pattern. Bake the cookies for 15 minutes at 180°C. Don't worry if they don't get brown, it's supposed to be this way. Let the cookies cool and decorate with powdered sugar if desired.
